Interview w/ Isabel Hoffmann: Her TellSpec device can tell us what allergens & pesticides are in our food.

ARTICLE UPDATE: I regret to report that I have decided to temporarily suspend access to this article. A few credible doubts about the technology have come to The Tender Foodie’s attention, and an interesting discussion has developed in James Randi Educational Foundation Forum, where Dr. Stephen Watson, TellSpec's CTO ("drswatson") is responding with the participants. You can follow that discussion here.

I'm suspending access to the article, not because of the technical doubts/questions, this is a natural discussion and I"m excited to hear how things progress, but because in my excitement about this potentially ground-breaking product, we missed an important detail that came to light in the forum - that the device might not be ready to properly detect allergens at the time of its release, and during its initial testing in the public arena. I feel that there is a misunderstanding here that needs to be completely clarified before we re-post the article.  I've begun corresponding with TellSpec to clarify this, and suspect that this will take some time, but my plan is to re-post the article with the proper clarifications that mitigate the risk of further misunderstanding. I certainly enjoyed speaking to Isabel Hoffmann, TellSpec's CEO during the interview, and should it prove appropriate, look forward to re-posting that interview at the proper time.

The Tender Foodie certainly hopes that this device could be created with great success for the food allergic community, and looks forward to any technical developments and information/proof regarding those developments.  Thank you for your patience.

Best Allergen-Free Chocolate 2013

Since I am a chocolaholic, I will always be on the lookout for the best chocolate for baking, cooking, eating and giving.  Here is a start to my list.  I'll keep adding to it and letting you know what else I find out, and publish a new one every year! So let me know your favorites and why.

Barry Callebaut - North America - DARK CHOCOLATE


Barry Callebaut dark chocolate is used by confection makers, restaurants and bakers world-wide because it is a fantastic chocolateThe North American factory is a dedicated dairy-free facility, and they test for dairy.  The North American factory also does not produce any gluten or nut products, however, they do not test or monitor sourcing. I use this chocolate for many recipes. 

  • Dairy Free (processed on a dedicated dairy-free, dark chocolate North American factory line & tested for milk.)
  • Kosher Certified
  • Vegan (no animal products are processed on their dark chocolate line)
  • Soy: Contains small amounts of soy (soy lecithin is used for consistency)
  • **Gluten: currently, gluten products are not processed in the North American Factory, however, there is no testing for this at the moment. 
  • **Nuts: currently, nuts are not processed in the North American Factory, however, there is no testing for this at the moment.  Some European factories do process nuts, so please do your own research.
  • Organic Status: not certified organic
  • GMO Status?  Currently Unknown.

Navitas Naturals Raw Cacao Powder

UPDATE 5/13/16

PLEASE NOTE: Navitas started producing tapioca in their factories some time ago, so I am no longer able to use their products because I have an anaphylactic response to tapioca. however, I picked up a package this week to show a friend, and the allegen statement has changed. It states that it processes  in a factory that also produces wheat, dairy, peanuts and more. Please check with the company and the label to be sure that this product is safe for you to consume if you are sensitie or allergic to the top 8 allergnes.


"All of Navitas Naturals products are inherently gluten free and vegan. We do not source or process anything with gluten and therefore our entire production facility is gluten free. We do not have a gluten free certification at this point nor do we test for parts per million for each product, but are working toward doing so for the near future. Our foods are also all dairy free. Again we do not test for parts per million at this time, but no dairy is ever present in our facility."

This is a great little chunk. The chocolate is very good, high quality and can be used in most of your baking needs. I've even used it to make truffles, which surprised me that these chunks would work for confection. Enjoy LIfe chocolate products do contain tapioca.

Eating Evolved - The Primal Dark Chocolate Company

Eating Evolved Vanilla Latte TruffleI have not yet tasted these incredible looking treats myself, but am adding them to this list because I've read other reviews which loved them. It is also rare to find a chocolate product that has no dairy, soy, gluten, or tapioca in it.  I corresponded with Eating Evolved on Facebook to find out more specific information on how they handle common allergens.  Here is what they said:

Our chocolates are completely gluten, dairy, soy-free and is made in a facility that is free of those allergens. We do have three flavors of Primal Chocolate that contain nuts (banana walnut, coconut almond, and fig & almond) so our facility is not nut-free.

No Gluten: no gluten in the ingredietns and made in a gluten-free facility but is not yet tested for gluten. Gluten testing is in the company's future plans.

No Dairy: no dairy n the ingredients and made in a dairy-free facility but is not yet tested for dairy. Dairy testing is in the company's future plans.

No Soy: no soy in the ingredients and made in a soy-free facility but is not yet tested for soy. Soy testing is in the company's future plans.

Righteously Raw

This is dark stuff, and I love, love, love it. If you haven't had raw chocolate that isn't too sweet, this might be a palate changer for you. The chocolate is developed to contain many phytonutrients from superfoods, including the raw cacao itself. I always feel like I feel better after I eat one of these bars. I don't think its my imagination! The acai and maca are my favorites. The caramel, which I also like, is an acquired taste (it doesn't taste like typical caramel), as is the rose. But I wouldn't kick them out of my shopping cart.

Gorgeous, Gluten-free (and Less Toxic) From Head-to-Toe

Think Differently About Your Skin


Ah, the pretty little bottles on your bathroom shelves. I used to arrange mine to display perfectly: logos front, colors coordinated, and carefully chosen for aesthetic appeal. One day, I turned them around.  Their ingredients read like a James Joyce novel. Daunting and unrepentant with long words that I had to look up. Even some of my favorite “natural” product ingredients translated into scary chemicals.

What I truly didn’t expect to find was that my toothpaste, lotions, shampoos, make up, and nail polish contained gluten. No wonder I was feeling like crap. Another piece of the puzzle of healing fell into place. My own body was in a constant, mid-grade allergic reaction because of what I put on my skin.

You might say, “I don’t eat lotion, what’s the big deal?” Think about it this way. You wash your hands and immediately put on lotion. A few minutes later you prep a chicken, cut vegetables, and kneed the dough for some fabulous gluten-free muffins. You wash your hands again and use lotion. You eat the roast chicken and lick your fingers. If your lotion or lipstick contains gluten, and it probably does, it just became an ingredient to your meal.

Researchers believe that gluten particles are too large to enter through the skin, but they can get into our blood stream through our eyes, ears, nose and mouth. Plus, many people are skin-sensitive to gluten. Look for hidden gluten in ingredients like Tocopherol or Vitamin E, since both are often derived from wheat or barley (aka, “gluten”).

515 Toxins on your Skin, Every Day?

If your favorite labels make your eyes cross, consider something else. Your skin is your largest organ and it is very absorbent. That’s why the smoker’s or hormone patches work. Current laws for beauty products still have some gaping loopholes, which allow for a mind-boggling number of cancer-linked chemicals and hormone disrupters that CAN be absorbed into your system through your skin. For instance, “fragrance” is considered a trade secret, so companies don’t have to disclose their fragrance ingredients, even if they contain potential allergens or harmful chemicals, as long as they meet the standards of the word, “fragrance” and as long as their levels are “safe.” More research has shown, however, that we women use as many as 515 chemicals on our skin through different products. Is this safe? You tell me. Gluten is only harmful to those who are sensitive to it, but some of these chemicals are harmful to everyone.

If you don’t want to smell like a coconut or a mango, choose fragrance free. The shampoo and conditioner leave hair feeling healthy and shiny. After washing, I add a few drops of an essential oil (like bergamot), which helps detangle and leaves me smelling like I want to smell.


TOOTHPASTE

Desert Essence Organics – Natural Tea Tree Oil and Neem Toothpaste

Believe it or not, many types of toothpaste contain hidden gluten and I was not looking forward to the switch. But I was shocked at how much I liked Dessert Essence toothpaste. My teeth feel cleaner than with most commercial brands, so I’m super pleased.

I met owner (and Michigan girl) Natalie Bausch at a gluten-free fair, and was intrigued that one of her inspirations for creating a gluten-free, non-toxic nail polish was that young girls tend to bite their nails. The company might be named after her teenage daughter, but the fabulous nail polish colors range from fun to sophisticated. They also lack that toxic paint smell, which is SO awesome. The polish might not last quite as long as the formaldahyte laden competitors, but it is also easier to remove, so you can be more creative and change up your colors more often.  I also appreciate the care Natalie has put into the design of her packaging.  I love a product that looks good on the shelf!

Edison Grainery: How I Fell Back in Love with Orzo.

Breaking up & Making up with Orzo

"Mr." Orzo. Those pasta pearls of happiness also known as “Risoni” or “Big Rice” to his family and friends. Sadly, I had to break off our relationship when I went gluten-free.  We had different needs.  Such is love.

Not to worry, I have fallen in love once again, but this time it is oh, so much better!  Just in time for Valentine’s Day, I’m head over heels for Edison Grainery’s gluten-free orzo.   I’ve never found this particular shape of pasta available as a gluten-free option and was anticipating a touch of disappointment when the "new" Mr. Orzo and I met in person.  After all, we were introduced on line.  It all started with facebook…how embarrassing.

 

It Started with a Gluten-Free Recipe

Photo courtesy of Edison GraineryI noticed a recipe on facebook for a light orzo salad that was gluten-free.  The recipe introduced me to  the new Edison Grainery facebook page, which I liked, of course.  Edison Grainery is the offshoot of Edison Grains, one of the leading bulk suppliers of “high quality, certified organic ingredients around the globe.” Edison Grainery  is, essentially, a mini-version of the company, created for families, and offering “organic ingredients in a family-friendly #5 and one pound bag at extremely competitive prices.”   Family-friendly indeed – so much so that the owner emailed me, thanking me for my order and telling me she had visited MY facebook page too.  She wrote that she would like to know more about what I do to help children learn to try new foods.  

Before chatting with her, I wanted to test the waters to see if I was remotely attracted to the products. I was most interested in getting to know Mr. Orzo and maybe his friend “Q Mac” as in “Quinoa Mac –n- Cheese”.  It was time.

 

Green on the Outside, Scrumptious on the Inside

I opened the box. Hmmm…the first thing I couldn’t help but notice was the way Mr. Orzo and his friend, Q Mac, were dressed in GREEN earth-friendly packaging.  The bags are designed to stand-up in your pantry, have a re-closable zipper and are backyard compostable.  Very nice first impression.  

I won’t go into too much detail on my new love life except to say: It’s the real deal – this orzo-love.  Big Rice and I are in a permanent relationship.  It’s that delicious.  And I confess, Q Mac and I have something going on too.  Crafted from Kosher, certified organic rice and quinoa flours, Q Mac serves up perfectly al dente with a medium-aged cheddar cheese sauce that is similar to a delicate alfredo.

 

Healthy Salt?

For a finishing touch, I added a touch of Himalayan Pink Salt.  The company explains that “by replacing ordinary table salt with Edison Grainery Himalayan Pink Salt, you provide your body with 84 essential minerals and support proper absorption of nutrients. It can also normalize blood pressure; eliminate toxins and help balance your body's electrolytes and pH levels.” I just bought it because it was pink, but I’ll take any added healthy benefits I can get.   Amy Barnes, the owner of Edison Grainery, tells me the color reflects the levels of minerals and iron and can range from white to a very deep pink.

Life Changing Moment, Affordable Organics

Which brings me to my phone call with Amy.  We chatted for over an hour.  Turns out, she is committed to developing a gluten-free product that appeals to the texture-sensitive taste buds of kids with feeding issues, especially autism.   I was struck by her compassion – Did she have a child with autism?  No, just a life changing experience that opened her heart.

Melanie Potock, MA, CCC-SLPMelanie Potock, MA, CCC-SLP, of www.mymunchbug.com.  Melanie is speech language pathologist who specializes in feeding.  Her work brings her into the homes and schools of her clients, kids, who for various reasons have difficulty with food or with eating. She works with kids and their parents to develop effective strategies that help children become “more adventurous eaters”.  At least 50% of her clients have food allergies or intolerances, and for them, “adventurous eating” takes on a special meaning.  Melanie is also the author of Happy Mealtimes with Happy Kids” and the executive producer of “Dancing in the Kitchen.”
